Mamliga (polenta) enriched with Easyfiber

Ingredients:
250 ml Easyfiber
30 g butter
Spices to taste – salt, ground black pepper, nutmeg spice
Fine cornmeal (instant polenta)
Preparation:
Pour 250 ml of Easyfiber into a medium/small saucepan and mix with the butter and salt over medium heat. Stir with a wooden spoon or ladle until the butter has melted and mixed with the drink.
At this point, you can also add a little finely ground black pepper and/or a little nutmeg. Gradually add the cornmeal to the pot, stirring constantly. It is important to maintain an even distribution of the cornmeal so that no lumps form.
Bring to a gentle boil while stirring frequently from the corners of the pot. Taste and adjust salt and seasoning. Transfer the pot to a low heat. Continue stirring every half minute for 5-7 minutes until the desired consistency is reached – a smooth texture that pours from a wooden spoon in one lump, leaving a thin layer on the spoon. Transfer to a plate and serve immediately. You can add Parmesan on top or alongside a heaping tablespoon of sour cream/yogurt.
