Rich sweet potato soup

Number of servings: 2 servings

Serving size: 1 medium bowl (about 250 grams)

Preparation time: 30 minutes

Ingredients:
2 medium sweet potatoes (about 250 grams)
1 medium carrot
1 medium onion
3 cloves
of garlic 1 3-4 cm piece of ginger
5 tablespoons olive oil 250 ml
Easydaily / Easyfiber
Enrichment Drink Salt and spices to taste – curry powder, turmeric, nutmeg, cinnamon, black pepper

Preparation: Preheat the oven to 200 degrees. Peel and roughly chop the sweet potato, carrot, and
onion
into equal-sized cubes. Mix the chopped vegetables and garlic cloves with 3 tablespoons of olive oil and the spices. Arrange on a baking sheet lined with baking paper and place in the oven for about 20 minutes until all the vegetables have softened and become lightly golden.
Peel the ginger – rub the peel with a metal spoon until all the peel comes off. Slice the ginger into thin slices.
When the vegetables in the oven are ready, sauté the ginger with 2 tablespoons of oil for about 2 minutes over medium-low heat, then add all the vegetables to the pot along with salt to taste and the EasyDiet/EasyFiber enrichment drink and stir in the pot for a minute or two.
Turn off the heat as soon as the liquids begin to bubble and carefully blend the entire mixture with a stick blender or a dedicated blender until smooth. Serve hot and eat.
