Filo baskets filled with vanilla and white chocolate gourmet pudding

Ingredients for the baskets:
4-6 sheets of filo dough, thawed overnight in the refrigerator
50 grams melted butter
2 tablespoons sugar
Ingredients for pudding and white chocolate filling:
1/3 package (30 grams) white chocolate, broken into cubes or coins
1 cup (240 ml) + 2 tablespoons (30 ml) milk
1 container (250 ml) 32% heavy cream
5 heaping tablespoons Anin (80 grams)
Ingredients for cherry sauce:
1 package (250 grams) cherries/blueberries (frozen or fresh)
1/3 cup (65 grams) sugar
1 tablespoon (10 grams) sifted cornstarch
2 tablespoons (30 ml) fruit liqueur/brandy/rum/water)
How to prepare:
To prepare the baskets: Preheat the oven to 175 degrees. Grease a springform pan well with melted butter or oil spray.
Brush a couple of leaves with butter/oil and sprinkle a little sugar on top. Cut into 15 x 15 cm squares and gently place them in each cavity in the pan so that a kind of cup is formed with the edges extending outward.
Bake for about 10 minutes, just until the dough is lightly golden. Remove from the oven, cool slightly, and carefully remove the filo baskets.
Prepare the filling: Place the chocolate and 2 tablespoons of milk in a bowl. Melt gently in the microwave and mix well until smooth. Cool slightly.
Pour the remaining milk (a 240 ml cup), the sweet cream, the melted chocolate and the sweetener into the mixer bowl. Beat at high speed until you obtain a soft cream. Transfer to a piping bag.
To make the cherry sauce: In a small saucepan, bring the cherries, sugar, cornstarch, and liqueur to a boil until the mixture bubbles, the sugar melts, and the mixture thickens slightly. Remove from heat and cool completely.
To assemble: Place the baskets on a serving plate. Pour the cream into each basket and place a spoonful of cherry sauce on top.
