Pumpkin puree enriched with calories and protein

Ingredients:

500 grams of fresh, peeled pumpkin

500 grams of fresh, peeled sweet potato

6 cloves of garlic (with the peel)

About 6 tablespoons of olive oil

250 ml DM Line

Salt and pepper to taste

Nutmeg or other spices (optional)

How to prepare:

Preheat oven/toaster oven to 200 ᵒC. Peel and cut the pumpkin and sweet potato into medium-sized pieces of similar size. Arrange in a baking dish and drizzle with olive oil, salt, and pepper. Add garlic cloves with the peel to the dish. Roast in the oven or toaster oven until all the vegetables are completely soft, between 40 and 60 minutes (depending on the power of the appliance) .

Place about 250 ml of DM Line in a pot along with the vegetables from the oven. Season with salt, pepper, nutmeg and your favorite spices. Heat over medium heat until lightly bubbling, and immediately turn off the heat. Using a stick blender, blend the mixture into a smooth puree .

Optional: If a smooth puree is needed for the IDDSI 4 texture, pass the puree through a fine sieve using a wooden spoon or ladle. Also run the outside walls of the sieve with the ladle .

Taste the puree and adjust seasoning if necessary. Serve hot or at room temperature .
